This jig consists of a test cell with an internal chamber, an extrusion lid and Perspex cap. An internal screw fitted to the base of the chamber is rotated to move the internal piston up or down to increase or decrease the space within the chamber and extrude the dough. The Perspex cap is used to reduce moisture loss when the sample is "resting". The cylinder probe is used to test the adhesiveness/stickiness of the dough.
