This jig comprises a preparation cell, a flattening plunger, aeration plunger and probe. The flattening plunger is used to flatten the dough sample and the spiked plunger aerates the sample before testing. The prepared sample is then tested with a 6 mm (0.24 in) diameter flat-ended probe.
